Recipe: Colorful Sheet Pan

Ingredients:

  • 1-2 chicken breast (4 oz each)

  • Bag of frozen or fresh veggies of your choice (Tip: Frozen veggies last 8-10 months in the freezer making them a great choice for meals cooked during the quarantine!)

  • 1 medium onion (color of your choice)

  • 5-6 red potatoes

  • 3 tablespoons of Olive oil

  • 3 teaspoons of Garlic powder

  • 3 teaspoons of Onion powder

  • 3 teaspoons of Oregano

  • 3 teaspoons of Basil

  • 3 dashes of Black pepper

  • 3 dashes of Cajun seasoning

Instructions:

  • Preheat the oven to 375 F.

  • Cover the cookie sheet with aluminum foil and spread 1 tablespoon of olive oil on it.

  • Dice red potatoes into quarter size bites. Place in a bowl. Add one tablespoon of olive oil. Season with a teaspoon of oregano, garlic powder, basil, and onion powder. Add a dash of cajun seasoning and pepper to the bowl. Mix the contents around in the bowl.

  • Cut the chicken breast into strips using a knife or kitchen scissors. Season with a teaspoon of oregano, garlic powder, basil, and onion powder. Add a dash of cajun seasoning and black pepper.

  • Add chicken and potatoes to the cookie sheet.

  • Add veggies to the cookie sheet. Cover with a teaspoon of olive oil and one teaspoon of oregano, garlic powder, basil, and onion powder.

  • Place the cookie sheet in the oven for 30-40 minutes.
